I was especially intrigued by, "Imagine that you have the ability to read minds. How would life change for you and everyone around you?" Creative writing is a great way to build writing fluency. Instructors can assign these prompts and let their students free write and not worry about spelling, grammar, or punctuation.
I also love picture prompts for writing. Examples can be found here.
Finally, videos are a great way to prompt writing. If a picture is worth a thousand words, a video may be worth even more! This is one of my all time favorite videos for writing with the prompt, how is failure the secret to success?
